Summer Heat, Cool As the Night: Summer Cocktail Recipes

Cool As The Night
Tequila Blanco, Orange Liqueur, Cucumber Puree, Fresh Lime Juice, Cane Sugar, Basil Leaves

Inspiration for Cool As The Night came from our imagining of the perfect July evening. A small-batch tequila blanco (traditionally an herbal, somewhat “hot” and “spicy” tequila) mixed with the cool, refreshing flavors of basil and cucumber, yield a surprisingly excellent pairing. Serve on the rocks and enjoy at 8pm, just as the sun is setting.

Ingredients
1 oz tequila
1 oz orange liqueur
2 oz cucumber puree (recipe below)
.5 oz fresh lime juice
.5 oz simple syrup

Method
In a shaker, combine tequila, orange liqueur, cucumber puree, fresh lime juice and simple syrup with 2 basil leaves and ice.
Shake vigorously for 15 seconds. Strain into a rocks glass with fresh ice. Garnish with fresh cucumber slices.

Cucumber Puree Recipe
Puree one cucumber with 1 oz simple syrup and ¼ oz fresh lime juice. Puree until liquid. Strain all pulp. Yields 1 cup (8oz) cucumber puree.
 

Summer Heat
Tequila Blanco, Jalapeno Honey Syrup, Fresh Grapefruit, Fresh Lime Juice, Cilantro, Jalapeno Slice
 
Ingredients:
1.5 ounce tequila blanco
1 ounce jalapeno honey syrup (recipe below)
2 ounces pink grapefruit juice
.75 ounce fresh lime juice
Cilantro sprigs
Jalapeno slices
Lime wedge for garnish

Method
Muddle two sprigs of fresh cilantro and 1 or 2 slices of jalapeno (depends on desired spice level) in the bottom of a shaker glass.
Add tequila, syrup, grapefruit and lime juices to the shaker over ice.
Shake vigorously. Strain into a highball or Collins glass.
Garnish with a fresh sprig of cilantro and a wedge of lime.

Jalapeno Honey Syrup
1 cup honey
1 cup water
1 jalapeno, halved with seeds intact

Add all ingredients to a pan and bring to a simmer over medium heat. Allow to simmer for at least 15 minutes. Cool and strain. Yields approximately 2 cups of syrup
